Smaller households require smaller recipes ~
January 22 2004--Along with the growing number of smaller households is a growing interest in smaller recipes. In adjusting to their new lifestyle as empty nesters, Ron and Dorothy Kuehn of Woodbine, Iowa, noticed that it really isn't fun to eat lasagna for a week. Their dislike of leftovers magnified the problem.
Cost was another consideration. Half of the casseroles were being thrown out in a few days. To resolve this dilemma, several recipes were cut in half. However, this noble activity added to the existing problem. The process was not only time-consuming, but half-cans of food were crowding the other food in the refrigerator, only to be thrown out a few days later. This, too, was expensive.
Refusing defeat, Kuehn accepted the challenge before her. Through trial and error and a lot of testing, her lemons were turned into lemonade. In 1998, at age 50, this late bloomer started writing about what she was familiar with. Two cookbooks for two and one cookbook for singles resulted. Home cooking was the subject, and normal, everyday ingredients were listed. The Kuehns soon realized that empty nesters weren't the only ones encountering the problems that brought about these cookbooks. College students, newlyweds, widowers and collectors were also showing an interest.
Ron and Dorothy love their new lifestyle. Their grocery money goes farther, and they have more variety in their meals.
